Turkey soup Serves 8

turkey carcass 1 potato, washed and cubed
1 bay leaf 1 large onion, minced
water 1 tbsp curry powder
2 stalks celery, sliced freshly ground pepper
3 carrots, peeled and sliced 1 tsp thyme
1/2 cup cooked rice 1 tsp rosemary

Place carcass into a large pot with bay leaf and cover with water.
Bring to a boil, lower the heat and simmer for 45 minutes. Remove
the carcass and let cool. Add the remaining ingredients and simmer
for 30 minutes or until the vegetables are soft. Remove the turkey
from the bones and add back to the pot with any other cold turkey
from the bird. Simmer for 15 minutes more. Serve.
