If you're wondering what to do with that leftover turkey, how about this soup recipe!

| Turkey soup | Serves 8 | ||

| turkey carcass | 1 potato, washed and cubed | ||
| 1 bay leaf | 1 large onion, minced | ||
| water | 1 tbsp curry powder | ||
| 2 stalks celery, sliced | freshly ground pepper | ||
| 3 carrots, peeled and sliced | 1 tsp thyme | ||
| 1/2 cup cooked rice | 1 tsp rosemary | ||

| Place carcass into a large pot with bay leaf and cover with water. | |||
| Bring to a boil, lower the heat and simmer for 45 minutes. Remove | |||
| the carcass and let cool. Add the remaining ingredients and simmer | |||
| for 30 minutes or until the vegetables are soft. Remove the turkey | |||
| from the bones and add back to the pot with any other cold turkey | |||
| from the bird. Simmer for 15 minutes more. Serve. | |||
