Marinated swordfish
Serves 4
4 medium swordfish steaks 1/2 cup olive oil
4 tbsp. soy sauce 1/2 cup Sherry
freshly grated ginger 1 tsp. grated orange peel
2 tsp. dill weed  
Place the swordfish into a medium bowl. In a small bowl mix the remaining ingredients and pour over the fish. Let marinate overnight. Place the steaks on a hot charcoal fire and cook each side approximately 7 minutes. This will depend on the thickness of the steaks and the intensity of the fire. Remove and serve.
