Cabbage is a member of the cruciferous family
and plays an
important role in good health. Eating it
may prevent cancer.

Sweet and sour cabbage

Serves 6
|
1 TBSP olive oil |
1/2 cup water |
| 1 clove garlic, minced | 1 tsp caraway seed |
1 large onion, chopped |
1/2 tsp paprika |
| 3 cups shredded cabbage | freshly ground pepper |
1 TBSP brown sugar |
1/4 cup red wine vinegar |
| Heat the oil in a heavy iron skillet over
medium heat and saute the garlic until soft.
Add the onion and saute until soft, about
3 minutes. Add cabbage and cook for 2 minutes.
Mix all the remaining ingredients until sugar
is dissolved and add to skillet. Bring to
a boil, lower heat and simmer for 5 minutes
or until cabbage is soft. Serve. |
