Cabbage is a member of the cruciferous family and plays an
important role in good health. Eating it may prevent cancer.

Sweet and sour cabbage
Serves 6
1 TBSP olive oil
1/2 cup water
1 clove garlic, minced 1 tsp caraway seed
1 large onion, chopped
1/2 tsp paprika
3 cups shredded cabbage freshly ground pepper
1 TBSP brown sugar
1/4 cup red wine vinegar
Heat the oil in a heavy iron skillet over medium heat and saute the garlic until soft. Add the onion and saute until soft, about 3 minutes. Add cabbage and cook for 2 minutes. Mix all the remaining ingredients until sugar is dissolved and add to skillet. Bring to a boil, lower heat and simmer for 5 minutes or until cabbage is soft. Serve.
