| Pecan crusted salmon | serves 6 | |||

| olive oil | 2 Tbsp. creole seasoning | |||
| 6 boneless salmon filets | 1/4 cup finely chopped pecans | |||
| prepared mustard | 1/4 cup bread crumbs | |||

| Lightly grease a large baking pan with olive oil. Place the filets in the pan and spread | ||||
| a thin layer of prepared mustard over each piece. Sprinkle with the creole seasoning, | ||||
| followed by the pecans and bread crumbs. Bake in a 375 degree oven for twenty | ||||
| minutes. Remove and serve. | ||||
