Pecan crusted salmon serves 6

olive oil 2 Tbsp. creole seasoning
6 boneless salmon filets 1/4 cup finely chopped pecans
prepared mustard 1/4 cup bread crumbs

Lightly grease a large baking pan with olive oil. Place the filets in the pan and spread
a thin layer of prepared mustard over each piece. Sprinkle with the creole seasoning,
followed by the pecans and bread crumbs. Bake in a 375 degree oven for twenty
minutes. Remove and serve.
