While in Sun City, Florida in January 2010,
I made this dish. I
found a recipe and modified it somewhat. I think you'll like it.
|pork stew||xxxxxxx||serves 4|
|3 boneless pork chops||2 cloves garlic, minced|
|3 Tbsp flour||1 bay leaf|
|2 Tbsp olive oil||15 oz. can diced tomatoes|
|1 large onion, chopped||1 bottle beer|
|1 apple, cubed||2 Tbsp brown sugar|
|3 carrots, diced||1/2 tsp oregano|
|1 cup chicken broth||freshly ground pepper|
|Cube the pork and dredge in the flour. In
a heavy casserole dish over medium
the pork in batches in oil, as necessary. Add the remaining ingredients and bring to a boil.
Lower ther heat and simmer for 45 minutes. Serve over cooked egg noodles or boiled rice.
