This pilaf will accompany the pecan crusted
salmon quite well.
You can use 3 strings of saffron or 1/4 teaspoon of the powder.
|pineapple rice||x||serves 8|
|1 small onion, minced||8 oz crushed pineapple|
|2 Tbsp olive oil||3 cups chicken broth|
|1 1/2 cups long grain rice||1 bay leaf|
|Saute the onion in oil in large skillet over medium heat until soft. Add|
|rice and cook for 2 minutes. Add the remaining ingredients and bring|
|to a boil. Lower the heat, simmer until all the broth is absorbed. Serve.|
