This pilaf will accompany the pecan crusted salmon quite well.
You can use 3 strings of saffron or 1/4 teaspoon of the powder.

pineapple rice x serves 8
1 small onion, minced 8 oz crushed pineapple
2 Tbsp olive oil 3 cups chicken broth
1 1/2 cups long grain rice 1 bay leaf
Saute the onion in oil in large skillet over medium heat until soft. Add
rice and cook for 2 minutes. Add the remaining ingredients and bring
to a boil. Lower the heat, simmer until all the broth is absorbed. Serve.
