This pilaf will accompany the pecan crusted
salmon quite well.
You can use 3 strings of saffron or 1/4
teaspoon of the powder.

| 1 small onion, minced | 8 oz crushed pineapple | |
| 2 Tbsp olive oil | 3 cups chicken broth | |
| 1 1/2 cups long grain rice | 1 bay leaf | |

| Saute the onion in oil in large skillet over medium heat until soft. Add | ||
| rice and cook for 2 minutes. Add the remaining ingredients and bring | ||
| to a boil. Lower the heat, simmer until all the broth is absorbed. Serve. | ||
