| 1/2 cup wine vinegar | 1/2 cup olive oil | |
| 1 tsp dried basil | 1 Tbsp brown sugar | |
| 1 bay leaf | 1 Tbsp prepared mustard | |
| 1 small onion, thinly sliced | 1 lb. small mushrooms | |

| In medium saucepan, bring the wine vinegar, basil, bay leaf, onion, olive oil, sugar and | ||
| mustard to a boil, add mushrooms and simmer for 7 minutes or until the mushrooms are | ||
| cooked. Remove to a glass bowl, cover, refrigerate and marinate for 24 hours. Serve. | ||
