marinated mushrooms serves 8
1/2 cup wine vinegar 1/2 cup olive oil
1 tsp dried basil 1 Tbsp brown sugar
1 bay leaf 1 Tbsp prepared mustard
1 small onion, thinly sliced 1 lb. small mushrooms
In medium saucepan, bring the wine vinegar, basil, bay leaf, onion, olive oil, sugar and
mustard to a boil, add mushrooms and simmer for 7 minutes or until the mushrooms are
cooked. Remove to a glass bowl, cover, refrigerate and marinate for 24 hours. Serve.
