In early 2005, I was on channel 17, a PBS
station in Buffalo for the program WNED COOKS:
Q is for Quick and Easy.
I had 7 minutes to make this chocolate mousse.
It was a huge hit as the people who tasted
it raved and thought they
were in heaven. Those in the studio were
actually fighting over the dessert. Pasta
dishes are good, and you can say
the same about mushrooms stuffed with crab,
both dishes that day on the show. However,
that day mousse was king!

Mousse au chocolat
|
Serves 8
|
| 8 oz. semi-sweet chocolate morsels | 3 tbsp. sugar |
| 2 oz. rum | 8 oz. heavy cream |
| 4 egg whites | |
|
In a small saucepan over low heat, melt the
chocolate morsels with the
rum, stirring to thoroughly blend.
Whip the egg whites with 1 tablespoon
of the sugar until they form peaks.
Blend into the chocolate mixture.
Whip the cream with the remaining
sugar and blend into the chocolate mixture.
Put the mousse into a bowl, cover
and refrigerate overnight. Serve. |
