This simple recipe takes very little time
and it has a wonderful flavor. If you
don't have Jamacian curry powder, you can make your own. The ingredients
are turmeric, coriander, fenugreek, cumin, allspice, pepper, garlic and salt. I'm
not sure of the how much of each - it doesn't tell me on the container - so you'll
have to experiment. Use very little salt and don't worry about the fenugreek.
|Jamaican rice||xxxxx||serves 6|
|1 small onion, chopped||1 cup long grain rice|
|1/2 green pepper, chopped||2 Tbsp Jamaican curry powder|
|2 Tbsp olive oil||2 cups water|
|In an iron skillet over low heat, saute the
onion and green pepper pepper in the oil
for 5 minutes. Add the rice and stir to coat. Cook for 2 minutes, add the remaining
ingredients and bring to a boil. Lower heat and simmer until water is absorbed. Serve.
