Some time ago I found an excellent recipe
for baked beans with breakfast sausage. Recently
about making it again, only using fresh Polish sausage. I'm sure you could also use the smoked variety,
but this would give quite a different flavor - I just may do that substitution some day. I also added a bit of
hickory barbeque sauce.The result was so good, I had to include my modified recipe here for all to share.
|barbeque beans with sausage||x||Serves 8|
|16 oz. pinto beans||1/2 lb. fresh Polish sausage|
|water||1/2 cup brown sugar|
|1 bay leaf||1/2 cup barbeque sauce|
|1 cup ketchup||1/3 cup molasses|
|1 large onion, chopped|
|In a large Dutch oven, soak the beans overnight. Add the bay leaf,
water to cover, bring to a boil, lower the heat and cook for 45 minutes. Add
the remaining ingredients and simmer for 1 hour. Serve.
