I don't have many Mexican or Tex-Mex recipes
on web site or in my cookbook, so
I'm offering this one. You can also make this with beef or pork. Serve it on tortillas
topped with salsa, guacamole, shredded cheese and sour cream, in any combination.
When I made this for the first time, I put it over cooked rice and it was delicious.
|chicken fajitas||serves 4|
|1/4 cup ketchup||1 Tbsp olive oil|
|2 Tbsp honey||1 large onion, thinly sliced|
|1 Tbsp soy sauce||1 large green pepper, thinly sliced|
|2 Tbsp lemon juice||1 1/2 cups cooked rice|
|2 boneless chicken breasts, sliced|
|Mix the first 4 ingrdients, pour over the
chicken and let marinate overnight or for
5 hours. Heat the oil in a large skillet over moderate heat, add onion and green pepper.
Cook for 3 minutes, add chicken, stirring until chicken is cooked. Pour over rice. Serve.
