Poached cod

Serves 4

3 tbsp. flour
|
1/2 cup dry red wine
|
|
2 lbs. of cod
|
1 tsp. dried dill weed
|
|
1 tbsp. olive oil
|
2 tbsp. dried minced onion
|
|
4 oz. tomato sauce
|
|
| Put the flour into a plastic bag and add the fish, a piece at a time. Shake the bag to coat each piece with the flour. Heat the oil in a large iron skillet over moderate heat. Add the pieces of cod, skin side up and cook for 1 minute. Turn the pieces over and cook the second side for 1 minute. Mix the tomato sauce, wine, dill and dried onion and add to the skillet. Bring the liquid to a boil and lower the heat. Simmer for 10 minutes or until the cod is done. It will flake when done. Serve with the wine sauce over boiled rice. | |
