In my 2005 book, for seeing eye dogs only, I mentioned that the government
spent $100,000 to study why people don’t
like
beets. I added my two cents
by saying, "The people probably aren’t
cooking them." Recently I met a woman
who mentioned her recipe, which - more or
less - is the feature of the month for
August. Maybe some will change their minds
after trying this simple dish.

| 4 large beets | 3 Tbsp vinegar | |
| 2 slices bacon | 1 Tbsp sugar | |

| Wash the beets and trim the leaves and part
of the root. In a large pan, cover the beets with water and bring to a boil. Lower the heat and cook for 45 minutes. Meanwhile, fry the bacon until crisp. Remove to a paper towel and drain. Drain the beets, cool, peel and mash, coursely. Mix the vinegar and sugar until the sugar is dissolved. Blend in the mixture along with the bacon and serve. |
