If you read The Read My Lips Cookbook, you may be familiar with my early
days making Freedom fries. I would save the
drippings when I fried bacon as
well as the fat from pork, beef and chicken
and add them to a can that I would
eventually use for deep frying. Besides those
potatoes, I also did a batch of
donuts and may have been a big threat to
the success of Dunkin' Donuts.
Yeah, right! Needless to say, the french
fries had great flavor, but weren't
very healthy for anyone. You can still enjoy
that potato delicacy but use
canola oil. There's a better option than
that. I bake the cut up potatoes in the
oven - they look just like fries and taste
great, too. You might say that I have
gained freedom from the grease and still
have the security of comfort food.
