Some time ago I found an excellent recipe
for baked beans with breakfast sausage. Recently
I thought
about making it again, only using fresh Polish
sausage. I'm sure you could also use the smoked variety,
but this would give quite a different flavor
- I just may do that substitution some day. I also added a bit of
hickory barbeque sauce.The result was so good, I had to include
my modified recipe here for all to share.

| 16 oz. pinto beans | 1/2 lb. fresh Polish sausage | |
| water | 1/2 cup brown sugar | |
| 1 bay leaf | 1/2 cup barbeque sauce | |
| 1 cup ketchup | 1/3 cup molasses | |
| 1 large onion, chopped | ||

| In a large Dutch oven, soak the beans overnight. Add the bay leaf,
enough water to cover, bring to a boil, lower the heat and cook for 45 minutes. Add the remaining ingredients and simmer for 1 hour. Serve. |
